Roll20's Help Center have Building Character Sheets & related pages, but is mostly just an outdated copy of the community-contributed documentation from 2019.
There are some pages for newer features like jQuery & Custom Roll Parsing, but these are quickly duplicated and expanded upon on the Community-documentation.
